The role of the Sous Chef at Paradise Valley Country Club is both dynamic and integral to the culinary operations at the Paradise Grill. This position entails managing and coordinating the activities of kitchen staff, including Line Cooks, Pantry Cooks, Dishwashers, Steward, Garde Manger, and Assistant Garde Manger. The Sous Chef ensures that all food is prepared to the highest quality standards, with emphasis on consistency, presentation, and taste. This role requires strong leadership skills to supervise, coach, and counsel kitchen employees, ensuring efficient food preparation during daily service and special events like banquets and social functions. The Sous Chef will prepare and carve meats and create complex dishes such as sauces, particularly during busy periods. Collaboration is key, as this role works closely with the Executive Chef and Executive Sous Chef to plan, prepare, and serve all food items and menus.
Additionally, the Sous Chef holds responsibilities for maintaining sanitary conditions in the kitchen, adhering strictly to federal, state, and local Sanitary Codes as well as club policies. The position includes scheduling staff to ensure proper coverage, conducting inventory and organizing food storage areas, overseeing deliveries for accuracy and quality, and implementing cleaning procedures with the Steward. The Sous Chef also acts as the kitchen lead in the absence of the Paradise Grill Chef, underscoring the importance of strong problem-solving and decision-making skills.
Effective communication in this role extends beyond the kitchen, requiring courteous and professional interaction with club members, management, coworkers, and other staff. This ensures smooth daily operations and reinforces the club's mission of excellence in service and quality.
