The role available at Eataly is for a Pastry Sous Chef Manager who will play a critical leadership function within the pastry department. This position is responsible for overseeing all pastry production, including Italian pasticcini, cakes, desserts, cookies, candies, and other traditional dolci items. Reporting directly to the Executive Chef and functionally to the Head of Pastry, the Pastry Sous Chef Manager leads a dedicated team of about 10 employees. This role is essential not only in managing day-to-day pastry production but also in ensuring that all products meet the highest quality standards in flavor, texture, portion size, and consistency to maintain the authenticity and excellence that Eataly customers expect.
The Pastry Sous Chef Manager actively participates in pastry preparation alongside their team, providing direct supervision and hands-on expertise. Additionally, the manager is responsible for employee scheduling, payroll submissions, and fostering a motivating environment by providing constructive feedback and training. Expertise in Italian pastry techniques is fundamental, as the role involves coaching and counseling team members to refine their skills and uphold traditional baking practices.
Quality control is a significant aspect of the position, as the manager verifies that all pastry items meet strict standards before they reach the customer. The role also entails producing decorative centerpieces and handling special pastry orders, which require creativity and precision. Furthermore, the manager oversees inventory management by ordering and requisitioning supplies necessary for the pastry shop, ensuring that production runs smoothly without interruptions.
Maintaining a sanitary and organized workspace in compliance with Department of Health standards is mandatory for this role, demonstrating a commitment to food safety and hygiene. The Pastry Sous Chef Manager may also be assigned various other duties to support the overall culinary operations within Eataly. This position offers a competitive salary ranging from $65,000 to $75,000 annually, reflecting the expertise and responsibility required.
