This Culinary III role is designed for experienced culinarians who excel in advanced food production, preparation, and order execution, working within the Food and Beverage banquet kitchen and outlet departments. Reporting to the Executive Chef of the restaurant and the Senior Sous Chef of Banquets, the position requires executing a broad range of cooking and baking techniques while maintaining company standards of quality and safety. The role demands a strong skill set in various cooking methods such as saute, braising, wood-fire grilling, frying, blanching, emulsifying, flat bread oven baking, poaching, and steaming, as well as baking procedures including measuring, tempering, proofing, and advanced knife techniques like roll cuts, brunoise, and macedoine. Culinary IIIs play an essential role in coordinating timing among different stations to ensure food is prepared and served simultaneously while adhering to recipe cards and presentation standards. They maintain cleanliness and organization throughout walk-in coolers, production stations, and kitchen areas, following strict health and safety guidelines compliant with HACCP, OSHA, and sanitation standards. This demanding position requires the ability to work across all kitchen stations and frequently supports front-line staff following management directives. Beyond technical expertise, this position requires physical stamina to endure long hours standing, lifting, and moving within a kitchen environment exposed to outdoor weather conditions, heat, cold, humidity, fumes, and the presence of moving parts and chemicals. Candidates must handle varying schedules that may include evenings, holidays, and overtime.
