The role of the Sous Chef at Constellation, based in Miami, Florida, offers a fantastic opportunity for culinary professionals with a specialty in high-end catering. This position is full-time and onsite, focusing primarily on the operations of a luxury off-premise catering commissary. As a Sous Chef, you will be instrumental in supervising and participating in the back-of-house (BOH) operations, mentoring staff, and maintaining rigorous standards of food quality and safety. You will be responsible for developing menus that meet consumer preferences while adhering to nutritional guidelines, budgetary restrictions, and ease of preparation. The Sous Chef will actively engage in menu planning, recipe testing, and purchasing specifications, ensuring all culinary output aligns with established procedures and the company's reputation for excellence.
Additional responsibilities include maintaining production, safety, and sanitation standards; directing daily food preparation activities; evaluating raw and finished food quality; and inspecting the quality of food preparation, presentation, and cleanliness of assigned units. Leadership duties encompass interviewing, selecting, training, and evaluating supervisory and support staff, along with financial management to control revenue and expenses.
