The role of the Sous Chef at Highgate Hotels involves ensuring the highest standards in kitchen operations, including the preparation of meals that meet quality, consistency, visual appeal, taste, and food cost objectives. This position requires providing training and leadership to kitchen staff, enforcing corporate quality standards, and establishing effective food specifications, portion control, recipes, and sanitation protocols. The Sous Chef is instrumental in managing food and labor costs while maximizing guest satisfaction, a critical balance in maintaining the high standards expected by Highgate. This role requires collaboration with food and beverage managers, overseeing kitchen operations, monitoring food quality, and ensuring compliance with health and safety regulations. The Sous Chef also plays a key role in staff performance evaluations, menu development alongside the Director of Food and Beverage, and timely reporting of kitchen operations. The salary for this role is $67,250 annually, reflecting its importance within the Highgate hospitality team. - At least 4 years of related progressive experience or culinary graduate with at least 2 years of progressive experience in hotel or related field
- knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations
