Maria and Enzo's Ristorante is a standout Italian dining establishment under Delaware North's Patina Group, located in the vibrant Lake Buena Vista area. We are currently seeking a dedicated Sous Chef to join the team at Maria and Enzo's Ristorante. This salaried, full-time role offers a competitive base pay range of $56,900 to $76,800 annually, complemented by an annual bonus plan based on company and individual performance or an uncapped sales incentive plan based on role performance. As Sous Chef, you will play a critical role in supporting the Executive Chef with managing high-volume kitchen operations, ensuring the highest quality of food preparation, and leading the culinary team with a strong commitment to excellence.
The Sous Chef position requires an individual with exceptional culinary skills, creativity, and leadership capabilities. You will be instrumental in supervising and guiding the kitchen staff, maintaining adherence to proper culinary techniques and recipe standards, and ensuring production efficiency. Your responsibilities will include assisting with hiring, training, mentoring, and fostering a collaborative work environment where team members can thrive. Your proficiency in managing food and labor costs, scheduling, inventory control, and compliance with health and safety regulations will contribute significantly to the operational success of the kitchen.
Additionally, you will collaborate closely with the Executive Chef and culinary team on menu development and recipe innovation, contributing your expertise in cost analysis and recipe documentation. This role demands a commitment to maintaining an organized, sanitary, and safe kitchen environment in line with all regulatory standards and company policies.

                - Minimum of 2 years of culinary management responsibilities in an a la carte restaurant operation
 - Proven experience in high-volume cooking food presentation and recipe adherence
 - Knowledge of food and labor cost management ordering and inventory control
 - Proficient computer skills including Word and Excel
 - Ability to obtain ServSafe Food Safety Handler and Training for Intervention Procedures certifications
 - Ability to work a flexible schedule to accommodate business levels
 - Strong leadership communication and mentoring skills
