The Catering and Clubs Sous Chef position at Levy, located at Fiserv Forum in Milwaukee, WI, is a vital culinary leadership role focused on ensuring exceptional food quality, safety, and guest satisfaction. This role demands a strong leader who can efficiently manage kitchen operations, uphold Levy's high culinary standards, and foster a collaborative environment across departments. The Sous Chef is accountable for managing daily kitchen functions, including food preparation, equipment maintenance, and event execution, adhering strictly to recipes and presentation standards to provide an outstanding dining experience.
A critical aspect of this role is food safety and sanitation leadership — this includes training staff in sanitation protocols, conducting inspections, enforcing compliance with health regulations, and managing proper food storage and waste disposal. The Sous Chef is also responsible for team coaching and development, mentoring culinary and utility staff through training sessions on menu items and Levy standards, conducting pre-shift meetings, and managing staffing levels to meet operational demands effectively.
Financial oversight is another key responsibility of the Catering and Clubs Sous Chef. This includes collaborating with leadership to achieve budgetary goals, controlling inventory and waste, supporting recipe and menu development, and assisting with cross-location event support to maximize profitability and enhance the guest experience.
