Currently, Pier Sixty-Six Resort offers an exciting opportunity for an experienced Chef de Partie - Pastry. This key culinary role involves leading the production and preparation of a vast range of high-quality pastries, desserts, breads, and other baked delicacies aligned with the resort’s upscale and refined brand. Working closely alongside the Executive Pastry Chef and other culinary professionals, the Chef de Partie will help craft innovative dessert menus featuring seasonal offerings, ensuring each creation meets the highest standards of quality, consistency, and presentation.
The role demands strong leadership capabilities, supervising junior pastry staff, organizing efficient kitchen workflows, and maintaining seamless communication within the team to ensure smooth operations. The Chef de Partie will also oversee the proper use and maintenance of essential pastry equipment, including ovens, mixers, and proofers, all while strictly adhering to food safety and hygiene regulations. From managing ingredient inventory and coordinating production schedules to ensuring meticulous sanitation practices, this position is vital to the culinary success and luxury guest experience at Pier Sixty-Six.
Working hours include opening duties such as organizing workstations, reviewing the day’s production plans, supervising the preparation of doughs and batters, conducting detailed equipment checks, and preparing pastries for breakfast service, banquet functions, and on-site restaurants. Additionally, the role entails physical endurance requirements including the ability to stand and move for extended periods and lifting of up to 25 pounds. - High school diploma or equivalent
- Proven experience as a Chef de Partie – Pastry or similar role
- Strong knowledge of pastry techniques including baking, laminating doughs, working with chocolate, sugar work, and plated dessert presentation
- Leadership experience with the ability to guide and mentor junior staff members in a fast-paced, high-pressure kitchen environment
- Fluency in English
- Ability to follow detailed recipes and adapt to changing needs in the kitchen
