For decades, the Mansion Restaurant has been celebrated as one of the best fine dining establishments in Dallas, delivering exceptional culinary experiences within an inviting and refined setting. The offered position is for a full-time permanent Line Cook within the Food & Beverage – Culinary department. The role centers on planning, preparing, setting up, and delivering quality hot food service that meets the high standards of the hotel’s kitchen. This includes the production of hot menu items, specials, and presentations such as hot appetizers, entrées, vegetable and potato dishes, sauces, stocks, and hot sandwiches, all in line with established plating guide specifications. The Line Cook is responsible for maintaining exceptional organization, cleanliness, and sanitation of all work areas and equipment throughout their shift.
Core responsibilities include maintaining compliance with departmental policies, state sanitation regulations, and hotel standards to ensure that service is consistently superior. The role demands collaboration with supervisors to prepare for daily business levels and special assignments, setting up workstations with the necessary tools, equipment, and mise en place, and overseeing the cleanliness and proper condition of all kitchen tools and supplies. The Line Cook also undertakes the selection, cleaning, and preparation of meats, seafood, and vegetables, and prepares menu items following precise recipes and yield guidelines to ensure consistent quality.
Additionally, the Line Cook must manage inventory effectively by informing supervisors of shortages and surpluses, maintaining proper storage procedures, minimizing waste, and adhering to food cost controls. The position requires an ability to work efficiently under pressure, communicate effectively with team members, and assist in maintaining an orderly and safe kitchen environment relevant to a 4 or 5-star hotel or restaurant. Physical demands include enduring long shifts in a fast-paced, hot kitchen environment and lifting items up to 50 pounds.
Candidates are preferred to have culinary certification and a minimum of six months’ experience in a comparable high-end hotel or restaurant environment. They must possess technical skills that include the ability to follow recipes accurately, use kitchen equipment safely, and produce creative, artistic food presentations. Strong organizational skills, the ability to prioritize tasks, good judgment, and a team-oriented attitude are essential. Proficiency in English is required, with fluency in additional languages considered a plus.
