The role of Dumpling Prep (Dumpling Trainee) at Din Tai Fung Downtown Disney is an exciting entry-level opportunity designed for individuals passionate about culinary arts, eager to develop hands-on skills in a fast-paced, team-oriented environment. In this role, trainees embark on a detailed, hands-on dumpling training program focused on perfecting the preparation, folding, and steaming of dumplings. This show kitchen position requires maintaining a professional appearance and workspace as diners can view the dumpling-making process. The training program aims to equip new team members with the expertise to create high-quality Xiao Long Bao and other dumplings, culminating in a transition to the Dumpling Prep position accompanied by a competitive hourly wage increase. Dumpling Trainees are responsible for measuring and preparing dough, skillfully rolling dumpling and bun skins, stuffing and closing dumplings, and organizing them for steaming. They also ensure allergen and meat type identifiers are correctly added and that the steaming process is executed precisely to uphold the brand's quality and food safety standards. Maintaining a clean and sanitary work environment is essential, as is adhering to labeling regulations and participating in regular staff meetings to stay aligned with company operations. Beyond primary tasks, Dumpling Trainees assist with kitchen cleanliness, organization of storage areas, lifting and moving materials as needed, and safeguarding proprietary recipes and standard operating procedures. Candidates do not need previous dumpling experience but should possess a friendly, energetic, and highly motivated disposition, comfortable standing for long periods and eager to learn new skills. Experience with dough preparation such as pastry or pizza dough is a plus but not a requirement.
