As a Food Preparation team member, the individual will be responsible for cutting and prepping vegetables, fruits, meats, soups, sauces, and desserts while following standardized recipes and visual guidelines to maintain consistency and quality. The role demands experience working across various kitchen stations such as sauté, broiler, fryer, pizza ovens, and pantry, requiring adaptability and multitasking skills.
The employee will also play a crucial role in managing and controlling portion sizes of different food items, ensuring that daily food preparation aligns with established pars to minimize waste while maintaining supply. Organizational skills are vital as the role requires managing storage areas, including refrigerators, freezers, and shelves, to keep the kitchen running smoothly.
Safety and quality control are key aspects of this position. The Food Preparation team member is expected to alert the Executive Chef of any potential food hazards, spoilage, or avoidable waste. They must also ensure that food is held, reheated, and frozen under correct temperature conditions, adhering to health guidelines and company policies. Marking, dating, covering, and rotating all perishables and non-perishables using the First-In, First-Out (FIFO) method are essential duties to maintain freshness and compliance.
Candidates for this role must be at least 21 years old and qualify to obtain a Racing License from the Louisiana Racing Commission.
