Maxime's is the latest private member's club established by the acclaimed British entrepreneur Robin Birley, who is also the visionary behind London's prestigious 5 Hertford Street and Oswald's. The role available is that of a Japanese Preparation Chef working within the Hiromi kitchen. This position is perfect for a chef who possesses significant experience and skill in Japanese cuisine, particularly in the art and science of sushi preparation. The Japanese Preparation Chef at Maxime's will be part of a high-performing culinary team, responsible for preparing sushi dishes with precision, consistency, and visual appeal. Candidates will handle all aspects of fish preparation, including filleting, portioning, and curing, while ensuring traditional methods are honored, such as proper rice preparation and seasoning. The chef must maintain exemplary hygiene and food safety standards, especially when working with raw seafood, an integral component of Japanese cuisine. Aside from technical expertise, the role demands collaboration with senior chefs to support the kitchen's daily mise en place and service operations. Inventory management for sushi ingredients and kitchen tools is also part of the responsibilities, requiring meticulous attention to detail and organizational skills.
