Not a Bakery (NAB) originated as a commissary kitchen supporting prominent restaurants including Twelve, Evo Kitchen + Bar, The Good Table, and the soon-to-open Douro. Over time, it has evolved into an independent brand known for its artisanal breads and pastries. Operating out of Portland, Maine, NAB wholesales its products to select purveyors and offers a seasonal retail service via a food trailer, connecting directly with the community and food enthusiasts. Built on a foundation of culinary creativity and craft, NAB successfully blends traditional baking techniques with modern innovation to create exceptional baked goods. The brand prides itself on maintaining the highest standards of quality, consistency, and hospitality, while fostering a collaborative, respectful, and growth-oriented workplace environment where every team member can thrive.
The Head Baker position at NAB is a critical leadership role blending hands-on bread production with strategic and operational management responsibilities. This role oversees the entire bread program, ensuring that all products meet the renowned brand standards. The Head Baker will directly contribute to recipe development, menu creation, and the evolution of seasonal offerings in collaboration with the pastry chef and other kitchen staff. Leadership duties include managing and training staff, nurturing a positive and respectful kitchen culture, and providing constructive feedback that promotes skill development. Additionally, the Head Baker will manage inventory, place supply orders, and maintain equipment to ensure optimal kitchen functionality, all while adhering to budgets and minimizing waste. Working closely with NAB leadership, the Head Baker helps drive innovation, maintain quality and consistency, and support overall team development.
