The Chef de Cuisine plays an integral role in the culinary department, operating under the direction of the Executive Sous Chef and in close partnership with the Executive Chef. This leadership position is responsible for overseeing the daily kitchen operations for assigned venues, managing both culinary management staff and hospitality hourly staff to ensure seamless and efficient service delivery. A passionate culinary expert, the Chef de Cuisine is charged with menu development, recipe creation, and maintaining consistent food quality, flavor profiles, and presentation across all dining occasions, including special functions and holidays.
In this role, the Chef de Cuisine schedules, supervises, coordinates, and trains kitchen staff while ensuring adherence to budgeted labor costs and operational standards. A focus on both culinary excellence and operational efficiency is paramount as the Chef de Cuisine collaborates closely with key stakeholders such as the Executive Chef and Venue Manager to forecast menu needs based on customer demand, business projections, historical data, and special event schedules. Their financial responsibilities include managing food and labor costs, overseeing purchasing of culinary products and equipment, and conducting monthly inventories to maintain profitable kitchen operations.
The position demands strong adherence to health and safety codes including those from the Health Department, Gaming, Casino, IHS, FDA, and OSHA, ensuring a safe working environment and compliance with regulatory inspections. Supervisory duties encompass employee recruitment, training, performance evaluation, discipline, and succession planning to foster a skilled, motivated, and well-prepared culinary team.
Beyond day-to-day operational duties, the Chef de Cuisine contributes to strategic kitchen management by implementing efficient work practices, leading by example in high-volume cooking environments such as a la carte and catering/banquet production. They must be proficient with Microsoft Office tools to support their administrative and reporting responsibilities. Licenses and certifications such as ServSafe and Food Handler's Card are mandatory, with potential gaming license requirements depending on regulatory oversight.
This position requires the ability to work in a fast-paced, high-demand environment, often during evenings, weekends, and holidays, and involves some physical demands consistent with commercial kitchen work. - Vocational, culinary or business degree from an accredited institute preferred
- minimum four years experience working in high-volume production, catering, multi-unit aspects and larger staff management in a related industry required
- minimum three years management experience in high-volume production, catering and multi-unit aspects as well as larger staff management in a related industry required
- related, relevant or direct experience may be considered in lieu of minimum educational requirements
- ability to handle high volume a la carte kitchen cooking or high-volume catering/banquet production
- proficient in Microsoft Word and Excel
- advanced skill level in hands-on training of staff
- must obtain and maintain a ServSafe certification
- must obtain and maintain a Food Handler's Card
- may be required to obtain and maintain a gaming license at discretion of San Manuel Tribal Gaming Commission
