For the 2025 season, American Cruise Lines is seeking talented Pastry Chefs to join their dynamic shipboard culinary team. This role is integral to delivering the exceptional dining experience that ACL is known for. Pastry Chefs will be responsible for creating a wide array of desserts, baked goods, bread, and confectionery items that meet the high-quality standards expected by guests and crew alike. The position requires creativity in menu development as well as technical skills to produce consistent, visually appealing, and flavorful pastries and sweets. The ideal Pastry Chef will have a strong understanding of flavor profiles and food presentation, with a passion for continuous innovation and research in dessert options. They will work closely with the Executive Chef to adhere to a daily menu matrix and ensure all baked goods are prepared according to established recipes, portion sizes, and presentation standards. Given the unique environment of shipboard life, these chefs should also be adaptable, able to work efficiently in a high-demand kitchen setting, and maintain professionalism and teamwork. Living and working onboard ACL vessels offers a unique opportunity for culinary professionals to engage in a challenging yet rewarding work environment. The ships feature well-equipped galleys with stunning views, comfortable living quarters, and comprehensive support to ensure chefs can focus on their craft. ACL covers travel expenses to and from assigned vessels, provides room and board, uniforms, and thorough paid training by industry experts. This position involves a demanding schedule of up to 14 hours per day, seven days a week, during a six-week contract period onboard, followed by two weeks of unpaid vacation.
