The role of Executive Chef aboard American Cruise Lines is a key leadership position responsible for delivering an outstanding culinary journey to every guest. This is a unique opportunity to lead a high-performing galley crew while traveling along some of the most scenic and culturally rich waterways in the United States during the 2025 season. The Executive Chef will be expected to design and execute regionally inspired menus that highlight fresh, local ingredients and compliment the surrounding environment and cultural heritage of each destination. As the culinary leader onboard, the Executive Chef plays a critical role in maintaining the highest food safety and sanitation standards as mandated by the FDA, ensuring excellent inventory management, portion control, and minimizing waste.
This position requires a hands-on leader who thrives in a dynamic, time-sensitive setting while mentoring a team of 6 to 10 culinary professionals. The Executive Chef is not only a master of culinary arts but also an inspirational coach, capable of fostering a positive work environment and motivating their team to perform at their best consistently. The role demands adaptability to last-minute operational changes and maintaining composure under pressure to guarantee an unforgettable dining experience for guests and crew alike. The standard onboard schedule for this role involves long working hours—up to 14 hours per day for 7 consecutive days—followed by scheduled unpaid vacation, reflecting the lifestyle commitment of luxury cruising.
