The role offered is a leadership position overseeing the unionized kitchen staff at The Ritz-Carlton, Chicago. This position demands a highly skilled, passionate hospitality professional dedicated to managing all aspects of kitchen operations and driving culinary excellence. The successful candidate will be entrusted with the long and short-term planning, daily kitchen management, and ensuring all food production meets the highest quality, safety, and sanitation standards that comply with all federal, state, corporate, and franchise regulations. This includes managing food and labor costs to maintain profitability while delivering an exceptional dining experience for hotel guests.
In this role, the candidate will recommend menu and procedural changes, prepare and oversee budgets, and lead the recruitment, training, and development of kitchen associates and managers. The ideal candidate will foster a positive and motivational work environment, ensure performance reviews and disciplinary measures are appropriately conducted, and spearhead continuous improvements in culinary processes. This position also demands proactive implementation of safety programs to minimize workplace accidents and related liabilities. Strong communication skills, excellent comprehension and literacy, and the ability to manage complex food and beverage operations are crucial for success.
The job requires physical stamina, as the candidate will be actively involved in kitchen inspections and monitoring, sometimes involving heavy lifting and continuous standing for extended periods. Working conditions include a wide temperature range, from the freezer at -10 degrees to kitchen front lines exceeding 100 degrees Fahrenheit.
