The position of a Benihana Chef is central to the dining experience. This role involves engaging guests, entertaining them with skilled cooking performances, and cooking and preparing hot meals tableside. The chef is responsible for ensuring correct food portions, maintaining cleanliness and sanitation in the kitchen and cooking areas, and preparing and setting up food for cooking and side orders. The chef must greet and welcome guests promptly, perform cooking shows with appropriate and courteous interaction, and provide detailed information about the dishes being prepared. Attention to detail is crucial, as the chef must follow Benihana’s cooking procedures, quality standards, recipe specifications, and food safety regulations. The role also involves opening and closing duties, including cleaning and maintenance tasks, ensuring the kitchen and cooking areas are sanitary and organized, and reporting any equipment or maintenance issues to management. The chef must handle food safely using proper storage, labeling, and rotation techniques in compliance with health and safety laws.
