The Sous Chef role at HHM Hotels offers a dynamic opportunity to support the Executive Chef in maintaining the highest standards of food preparation, kitchen operations, and guest service within their culinary teams. As a pivotal member of the kitchen management team, the Sous Chef plays a vital role in overseeing kitchen staff, ensuring culinary quality and consistency, and upholding HHM Hotels' sustainability initiatives through the EarthView program.
This position involves comprehensive leadership responsibilities including interviewing, selecting, training, and coaching kitchen associates to align with brand and company standards. The Sous Chef is responsible for managing menu preparation, recipe development, and execution, as well as monitoring portion control and food presentation in accordance with departmental guidelines. They supervise kitchen personnel to maintain proper cooking methods, garnish standards, and portion sizes, all while managing budgets and controlling operational costs prudently.
Further duties include fostering team development through skill enhancement, performance evaluations, and facilitating clear communication channels via regular staff meetings. The role demands a proactive approach to addressing team concerns, supporting a safe work environment adhering to MSDS and OSHA standards, and ensuring compliance with safety and sustainability practices.
