The Food & Beverage Manager reports directly to the Assistant Director of Food & Beverage and is responsible for the comprehensive management of both In-Room Dining (IRD) and seasonal pool operations. This involves overseeing all facets of service delivery, staffing, compliance with policies and regulations, and financial performance. The manager leads a team of food and beverage professionals, ensuring that the brand’s sequence of service components are executed flawlessly, thereby enhancing guest satisfaction with every dining experience. This role demands an individual who possesses thorough knowledge of all menu items, preparation methods, ingredient details, and presentation standards, as well as extensive familiarity with beverage selections including liquor brands, beers, wines, and champagnes. The manager must also ensure adherence to state liquor laws by preventing service to minors and intoxicated guests, thereby maintaining the hotel's legal compliance and reputation. Operational responsibilities include managing daily schedules, monitoring sales and revenue against budgets, managing payroll and cashiering procedures, and coordinating with other department heads to deliver a cohesive guest experience. The manager is also charged with maintaining cleanliness and organization within the department, setting par levels for supplies, and ensuring all equipment is functional and well-maintained. A critical aspect of the role includes human resources functions: interviewing, hiring, onboarding, and training staff, conducting performance appraisals and disciplinary procedures, and fostering a positive work environment that promotes productivity and employee morale. Leadership extends to conducting meetings, coordinating breaks and schedules, and ensuring staff adhere to grooming and attire standards. Additionally, the Food & Beverage Manager is expected to actively contribute to marketing efforts by developing marketing plans, programming calendars, and special holiday offerings.
