This job vacancy is for the position of Kitchen Manager, which operates under the general supervision of a designated supervisor. The Kitchen Manager plays a critical role in ensuring efficient food production and inventory management at the assigned location. Responsibilities include managing food production records, recipe scaling, ordering, receiving, and the safe storage of food and supplies. The manager must ensure the culinary team is well-supplied with all necessary ingredients and products for smooth daily operations. The role demands flexibility as it requires working evenings and weekends to meet business needs.
Key functions of the Kitchen Manager include optimizing inventory control procedures to minimize waste, preparing a variety of food and beverages when necessary, and accurately forecasting customer counts to adjust food production accordingly. The manager distributes scaled recipes and production records to departments and ensures those records are accurately completed daily by the culinary staff. Food safety is a priority, with strict adherence to HACCP standards for prepared, packaged, stored, and discarded foods. The individual in this role sets up appropriate labeling systems and ensures compliance with laws, regulations, and Foundation standards within their operational area.
Additional duties involve overseeing the selection, training, supervision, and evaluation of staff needed to maintain effective operations. The Kitchen Manager also monitors contracted staff responsible for services like custodial, landscaping, pest control, and maintenance, ensuring facility standards are upheld. The role includes direct interaction with customers and vendors to resolve complaints and issues in a timely manner. Operational tasks include managing work schedules, ensuring accurate time recording according to Foundation standards, reporting accidents and injuries promptly, and submitting various routine and complex reports accurately and on time. The Kitchen Manager is responsible for monthly inventory accuracy and must ensure the assigned area maintains high quality and cleanliness standards at all times.
This position also requires the operation of company vehicles to transport food, staff, and guests safely. Problem-solving skills are essential for addressing equipment, maintenance, and facility issues. Candidates must demonstrate flexibility to work varied schedules, including evenings and weekends, and must embody the organization's vision, mission, and values. Strong communication and interpersonal skills, resourcefulness, initiative, and the ability to work cooperatively in a multi-ethnic environment are critical for success in this role.
Cal Poly Pomona Enterprises requires candidates to have completion of a two-year college degree or vocational certificate in culinary arts or management coupled with at least two years of food production management experience, or five years of related experience.
