The Pastry Sous Chef role at Pebble Beach Company is a critical position within the culinary division, particularly responsible for maintaining the highest standards in pastry preparation and presentation across all Spanish Bay outlets, as well as banquets and special events. This position offers an annual salary range between $75,000 and $88,000 plus bonus compensation. The Pastry Sous Chef oversees the design, production, quality control, freshness, and quantity of all pastries and baked goods. Collaboration with executive chefs and restaurant chefs is essential to innovate dessert menus, ensuring offerings are both creative and aligned with Pebble Beach’s reputation for excellence. Additionally, the Sous Chef manages staff scheduling, recipe documentation, and ensures compliance with all health, safety, and sanitation protocols throughout the pastry and bake shops.
In this role, you will supervise and train pastry staff, assist with event pastry setups, monitor employee time records, and control waste and spoilage to optimize operation efficiency. You are also responsible for maintaining a clean and organized pastry shop environment and reporting any equipment issues or safety hazards to the Engineering Department promptly. The position involves detailed administrative responsibilities such as preparing food orders, requisitions, and performance evaluations.
