The Executive Sous Chef position at the Long Beach Convention Center is a vital role within the culinary team, primarily responsible for overseeing all activities of the hot kitchen. This position works closely alongside the Executive Chef to plan and execute special menus, conduct on-site tastings, and manage the daily operations of the kitchen to ensure culinary excellence. The Executive Sous Chef plays a critical role in estimating food consumption, supervising purchasing processes, and ensuring proper inventory management with rigorous application of the First In, First Out (FIFO) method. This role demands strong leadership and organizational skills to supervise and coordinate a team of 1 to 50 kitchen personnel, ensuring efficient scheduling, training, and performance management. The Executive Sous Chef is crucial in upholding high standards of nutrition, hygiene, and sanitation according to regulatory guidelines. The role requires a dynamic individual capable of maintaining quality control, cost efficiency, and timely food production in a fast-paced environment. Flexibility in work hours, including nights, weekends, and holidays, is essential to meet the varied scheduling demands of the convention center's busy calendar. - One-year certificate from college or technical school and four years related experience and/or training or equivalent combination of education and experience
- current certification in food handling and safety sanitation (Serv-Safe or similar) is required
- ability to work flexible hours, including nights, weekends, and holidays
- ability to lift and/or move up to 25 pounds regularly
- excellent organizational and planning skills
