For the 2025 season, American Cruise Lines is seeking experienced Sous Chefs to join their shipboard culinary team. The Sous Chef position is integral to maintaining the high standards of cuisine across all dining venues onboard. This role involves overseeing food preparation, execution, and presentation from breakfast through dinner, including primary responsibility for café food and hors d'oeuvres quality. The Sous Chef will work closely with the Executive Chef and the culinary team to ensure consistency, innovation, and excellence in all dishes served, adhering strictly to ingredient quality and safety standards. This position offers the opportunity to be part of a dynamic team in a unique setting that combines travel with professional culinary work.
Sous Chefs at American Cruise Lines are expected to lead kitchen operations efficiently, ensuring that all food is prepared quickly and to the highest standards of flavor and presentation. They will organize kitchen workflows to optimize productivity and maintain discipline within the brigade while adhering to strict hygiene and food safety protocols. Attention to detail and maintaining consistency in food quality, especially in specialty food areas like the café and buffet, is a key part of the role. The position demands a strong team player with excellent communication skills who can work under pressure and handle multiple tasks seamlessly. Working schedules involve rotations onboard ships for six to eight weeks followed by one to two weeks off, reflecting the cruise line’s operational patterns. Candidates must possess the necessary certifications and credentials such as the ServSafe Manager Certification and the Transportation Worker Identification Credential (TWIC).

- Minimum 5 years of culinary experience in full-service resort, hotel, or cruise ship
- ServSafe Manager Certification strongly preferred
- Familiar with food safety standards
- Must be able to multi-task, take direction, and be a team player
- Ability to work with composure under pressure
- Must possess problem solving skills, self-motivation, and organization
- Must be able to speak, read, and understand basic cooking recipes and adhere to directions
- An effective leader who can effectively control his/her time management
- Excellent oral communication and interpersonal skills
- Must be able to pass a pre-employment drug test

- Training and teaching experience
- Ability to be on a work rotation of 6 to 8 weeks onboard followed by 1 to 2 weeks off
- Transportation Worker Identification Credential (TWIC)
