The opportunity presented is for the role of a Line Cook, an essential position within the culinary team responsible for preparing food items according to production requirements and established guest service and sustainability standards. This role includes preparing food of consistent quality by following recipe cards along with production and portion standards. The Line Cook is expected to manage food preparation efficiently by beginning food items ahead of time without over-preparing, properly dating food containers, and rotating stock according to company standards to ensure safety and freshness. They play a critical role in checking inventory pars for each shift, managing shortage risks, and organizing the kitchen line setup and freezer pulls to support seamless meal service.
Additionally, the Line Cook must assist in controlling food cost by implementing strategies to reduce waste and loss, operate and maintain kitchen equipment properly, and follow strict safety, OSHA, and MSDS guidelines. Other duties include adhering to the sustainability practices outlined in HHM's EarthView program and performing other tasks as requested by management. The position offers a clear growth path starting from Lead Cook progressing to Sous Chef and potentially advancing to Assistant to the Head Chef, demonstrating the institution's commitment to employee development.
