The role of the Executive Chef is central to the success of the property's culinary operations. This senior leadership position entails providing strategic direction and daily oversight for all back-of-house (BOH) culinary activities and staff management. The Executive Chef is responsible for ensuring that all kitchen operations comply with departmental and company standards as well as health, safety, and regulatory requirements. The appointed individual will oversee staffing levels, ensuring alignment with business needs, and will manage food and labor costs effectively to maintain profitability. Financial acumen is crucial, as the Executive Chef must collaborate with the Director of Culinary Operations on budgeting, menu and recipe development, and cost control procedures. The role demands a high level of hands-on engagement, including regular kitchen walkthroughs to monitor quality, safety, and employee performance. Furthermore, the Executive Chef is tasked with upholding impeccable customer service standards, swiftly resolving any issues, and fostering a motivated and well-trained culinary team that reflects the brand's values. This role requires a thorough understanding of culinary unions, inventory management, and cost control. Candidates should be experienced in working in large-volume kitchen environments, preferably within hotels or casinos, and demonstrate strong leadership, communication, and organizational skills. This is a full-time position with competitive compensation reflecting the seniority and expertise required.
- Minimum five years of experience in a high volume kitchen operation, preferably in a hotel/casino environment
- Prior experience in a similar position
- Knowledge of food products, preparation styles, and recipes utilized on property
- Ability to review and interpret financial reports
- One-year inventory and cost management experience
- Computer skills helpful
- Good people skills
- Ability to work efficiently and independently
- Training and coaching skills
- Knowledge of culinary and bartender union contracts
- Knowledge of cash registers and front of the house equipment
- Minimum age requirement is 21
- Ability to read and understand policies and procedures
- Effective communication skills in English
- Ability to complete standard forms and reports
- Basic mathematical skills
