The General Manager position at Sinatra represents a pivotal leadership role responsible for upholding and advancing Wynn's high standards of fine dining service and operational excellence. This full-time role demands a seasoned hospitality professional who thrives in a luxury, high-volume restaurant environment. The General Manager's key responsibility is to provide strategic direction and operational oversight to Sinatra's management and staff while ensuring seamless, efficient service that aligns with Wynn's business objectives. The GM acts as the driving force behind the restaurant's success by maintaining operational standards, managing financial performance including budgets and costs, and supporting employee development to foster a collaborative team culture.
The role encompasses critical functions such as maintaining the restaurant’s facility to ensure immaculate presentation, managing labor relations in compliance with collective bargaining agreements, conducting weekly operational meetings with the management team, and overseeing cost controls including food and labor costs. The GM is also entrusted with conducting sales analysis to optimize menu mix and profitability, collaborating closely with executive chefs and brand partners on new culinary innovations, and enforcing prompt and effective service corrections through training and coaching. Moreover, the General Manager is expected to build and sustain positive relationships with guests, ensuring that service quality consistently exceeds expectations and that guest feedback is actively solicited and addressed.
Guest services are of utmost importance in this role, with responsibilities including establishing best-in-class service training, anticipating guest needs, participating in service improvement initiatives such as Medallia, and providing personalized service to VIPs and media representatives. The GM leads by example as a visible presence on the floor, engaging with guests and managing their dining experience to maintain ideal pacing and satisfaction.
On the people and culture front, the General Manager provides leadership and mentorship to the management team, promotes a positive work environment with mutual respect and empowerment, and oversees recruitment, training, and development initiatives. This includes the creation of operational manuals, administering performance evaluations, and orchestrating regular training and refresher sessions. The GM fosters a team-oriented culture that encourages involvement and accountability at all levels.
The role also involves company-wide responsibilities such as evaluating and enhancing operational practices to increase profitability, creatively promoting the restaurant's image and revenue streams, collaborating with other departments within the hotel, and ensuring adherence to company policies and safety regulations including health and OSHA standards.

- Minimum of two years' experience as a General Manager or similar supervisory role in luxury fine dining, high-volume restaurants
- Fluent in English
- Excellent knowledge of Italian food, beverages, cost control, and reporting (P&L)
- Able to obtain and maintain relevant licenses and work cards including health and alcohol awareness cards
- High school diploma or equivalent
- Bachelor's degree in hospitality management preferred
- Proficient in Microsoft Office, Outlook, POS (Micros), purchasing, warehouse requisition, time-keeping, and host systems (SevenRooms or similar)
- Ability to stand long hours
- Maintain a clean and professional appearance including attire according to Wynn standards
