The role of Chef de Cuisine at San Manuel is a crucial leadership position within the culinary team, reporting directly to the Executive Sous Chef and working closely with the Executive Chef. The Chef de Cuisine is entrusted with supervising culinary management staff and hourly kitchen staff, ensuring the smooth operation of all kitchen activities for their assigned venue or venues. This role involves the direct responsibility for scheduling, training, and coordinating culinary team members, maintaining high standards of food quality, safety, and consistency. The Chef de Cuisine develops menus and recipes tailored to their venue, overseeing food preparation for all occasions including daily service, special functions, and holidays.
This position requires a balance of culinary expertise and management skills. The Chef de Cuisine must ensure compliance with health and safety regulations, monitor kitchen operations within budget constraints, manage food and labor costs, and collaborate with venue managers and food and beverage analysts to achieve financial objectives. A key part of the role is to mentor kitchen management staff, foster a positive and productive work environment, and maintain adherence to organizational policies and industry standards.
This full-time role demands a candidate with experience in high-volume production and catering environments, capable of handling demanding peak periods with efficiency and professionalism. The Chef de Cuisine is also involved in maintaining detailed documentation including logs and requisitions, participating in inspections, and ensuring all kitchen activities align with regulatory requirements. - Vocational, culinary or business degree from an accredited institute preferred
- minimum four years experience working in high-volume production, catering, multi-unit aspects and larger staff management in a related industry required
- minimum three years management experience in high volume production, catering and multi-unit aspects as well as larger staff management in a related industry required
- related, relevant and/or direct experience may be considered in lieu of minimum educational requirements indicated above
- ability to handle high volume a la carte kitchen cooking, or high-volume catering/banquet production and expediting of food during peak periods of business in all stated areas
- proficient in Microsoft Office - Microsoft Word and Excel are required
- possess advanced skill level in hands-on training of staff
- must obtain and maintain a ServSafe certification
- must obtain and maintain a Food Handler's Card
- may be required to obtain and maintain a gaming license at the discretion of the San Manuel Tribal Gaming Commission
