The Executive Sous Chef role at White Lodging is a critical leadership position within its banquet culinary operations. This role is designed for a dedicated culinary professional who will oversee all aspects of banquet food preparation, ensuring high-quality dish execution, compliance with rigorous health and safety standards, and an exceptional dining experience for guests. The Executive Sous Chef collaborates closely with the Executive Chef to develop and implement innovative banquet menus and financial strategies that meet and exceed the company’s operational objectives. This role carries significant responsibilities including managing staffing, optimizing food preparation processes, leading culinary teams, and maintaining budget controls aligned with organizational goals. In this position, the Executive Sous Chef acts as a mentor and trainer for culinary staff, fostering a culture dedicated to continuous learning and professional development. Managing food expenses like invoices, payroll, and inventory falls under this role to ensure strict adherence to budgetary constraints. Additionally, the Executive Sous Chef supports and partners with cross-departmental teams including Sales, Front of House (FOH), and Events to elevate guest dining experiences during banquet events. The position calls for someone with proven leadership skills in high-volume banquet environments, expertise in menu creation and food safety compliance, as well as strong analytical capabilities to manage operational efficiencies. Ideal candidates will bring a minimum of five years of banquet chef experience within large-scale operations and demonstrate excellent interpersonal and coaching skills. An associate's degree in culinary arts or business administration is preferred but not mandatory.
