The Pastry Chef position at Loews Ventana Canyon Resort is a vital role within the culinary team, responsible for maintaining the highest standards of quality in the pastry department. This role involves preparing a wide variety of dessert and pastry items in accordance with established recipes and specifications, ensuring consistency and excellence in every dish. Reporting directly to the Pastry Chef and Sous Chef, the incumbent will lead cooks in the absence of supervisors, oversee inventory control, portion control, and adhere to cost and quality standards. Attention to detail is crucial, including proper storage, labeling, and sanitation to comply with health regulations.
This position requires expertise in classical French desserts, chocolate handling, sugar work, and various pastry techniques such as mixing, piping, decorating, and cake building. It demands the ability to work under pressure, handle multiple tasks, and maintain cleanliness and order in the pastry workspace. The Pastry Chef will also participate in essential hotel meetings and training, maintain equipment condition, and follow safety and hotel policies. - Pastry diploma or degree preferred
- Minimum of 4-6 years experience with strong working knowledge of cooking, baking and pastry fundamentals
- Ability to obtain Food Handler's Card
- Ability to work flexible schedules including weekends and holidays
- Physical ability to bend, stoop, stand, lift 50 pounds and push carts weighing up to 200 pounds
- Ability to communicate effectively in English
