The Cook role at Black Bear Diner is pivotal in maintaining the kitchen’s efficiency and food quality. This position involves consistently preparing, cooking, and portioning all food items according to Black Bear Diner recipes, procedures, and standards. The cook is responsible for adhering to all food safety protocols, including checking and maintaining temperatures, proper labeling and dating of products, and rotating inventory to use older items first to ensure freshness and prevent waste. Maintaining cleanliness and sanitation in the work area, including tables, shelves, stoves, ovens, and refrigeration units, is an essential part of the role to meet health and safety regulations. The role also includes handling, storing, and rotating all products correctly, ensuring that food items are ready for service on time and meet the quality standards expected by both management and guests. The cook will complete sidework associated with their station and shift, contributing to the overall workflow and smooth operation of the kitchen. Closing duties require following a strict checklist to ensure the prep and bake areas are correctly shut down, and assisting fellow team members in closing their stations and the kitchen. The ability to work well under the manager-on-duty’s direction and take on other related duties as assigned is important for success in this role. This is a fast-paced, physical job requiring the ability to work in a hot, wet, humid, and noisy environment for long periods. The position demands the physical capability to lift heavy items — up to 60 pounds — repeatedly during a shift, stand for hours, and perform tasks requiring bending, reaching, and stooping.
