The Sous Chef will be integral to the culinary operations, working closely with the Executive Chef and other team members to ensure that every dish meets the company’s high standards of quality, taste, and presentation. Responsibilities span overseeing menu execution for all meals served, from breakfast through dinner, including main restaurant fare, café offerings, and hors d’oeuvres. Sous Chefs are tasked with maintaining consistency in culinary excellence across all food outlets aboard each ship, ensuring guests receive outstanding food no matter where they dine. In addition to food preparation and quality control, the Sous Chef will help organize and direct kitchen operations to run efficiently and effectively. This includes managing work assignments, maintaining discipline, prioritizing food safety and hygiene, and fostering a positive, collaborative work environment. The role demands someone who thrives under pressure, can multi-task efficiently, and leads by example. Candidates should possess strong culinary knowledge, leadership skills, and a passion for creating diverse menus with fresh, high-quality ingredients. American Cruise Lines offers a dynamic work schedule, with rotations of 6 to 8 weeks onboard followed by 1 to 2 weeks off, ideal for those seeking a balance of travel and downtime. This position requires experience in high-volume, full-service resort, hotel, or cruise ship kitchens and a familiarity with food safety regulations. Preferred candidates will hold ServSafe Manager Certification and possess additional certifications such as the Transportation Worker Identification Credential (TWIC). Candidates must also successfully complete a criminal background check and pre-employment drug screening.   • Minimum 5 years of culinary experience in full-service resort, hotel, or cruise ship
