The Sous Chef role at LSF Harborside LLC is a pivotal leadership position within the heart of house (HOH) team. This key management role entails directing and overseeing the daily operations of the HOH department, including hiring, scheduling, assigning and directing work, training, coaching, counseling, and disciplining staff members. The Sous Chef is instrumental in conducting regular team meetings, ensuring ongoing education, and performing performance reviews to promote team growth and efficiency.
Working closely under the Executive Sous Chef, the Sous Chef manages the work of multiple HOH team members such as Cooks and other kitchen staff, collaborating to maintain high standards of food quality, safety, and efficient kitchen operations. In the absence of senior management such as the Executive Chef or Executive Sous Chef, this role assumes full responsibility for the HOH department, ensuring seamless kitchen functionality and guest satisfaction.
The position also involves critical responsibilities such as managing inventory, controlling food and labor costs, investigating variances, ordering supplies, and ensuring compliance with company policies related to food safety, sanitation, allergies, OSHA regulations, and team member conduct. Additionally, the Sous Chef addresses guest complaints promptly and professionally, supports hiring decisions by participating in interviews, and authorizes overtime when necessary.
This role requires exercising discretion and independent judgment to enforce management policies and resolve operational matters that impact the department and overall restaurant performance. The ability to lead and mentor cooks and HOH team members is essential, facilitating their growth and empowering them to meet performance expectations. The Sous Chef ensures appropriate staffing levels for each shift and oversees breaks and meal periods based on business needs.

Proficiency with business systems such as POS, HRIS, scheduling, inventory, and labor management software is necessary for effective job performance.

- 3 to 5 years in professional kitchens with at least 1 year in a Sous Chef or similar leadership role
- Culinary degree or certificate preferred
- High school diploma required
- Prior work experience in a restaurant or hospitality position
- Serv Safe Food and Alcohol Certification required
- Leadership qualities including good listening skills, ability to motivate others, respect and tolerance for others, and effective communication with guests, vendors, team members, management, and company personnel
- Good judgment and ability to make independent decisions and solve problems
- Excellent guest service skills
- Ability to understand guest needs and ask questions to expedite requests
- Proficiency in Microsoft Outlook including email management, calendar scheduling, and task organization.
