The position being offered is a specialized culinary role focusing primarily on raw bar and sushi operations within one of SERG's acclaimed restaurant venues. This role involves key responsibilities such as sushi rolling, shucking oysters, and preparing sushi features. It also requires performing various other essential functions in food preparation, including final plate preparation, garnishing cooked items, and preparing appropriate garnishes for all hot menu plate items. The successful candidate will be expected to promote and embody the mission and values of SERG Restaurant Group in every aspect of their work. They are tasked with maintaining cleanliness and sanitation within food prep and serving areas according to food safety standards and ensuring that all food is stored, cooked, and maintained at appropriate temperatures. This includes regulating the temperature of ovens, broilers, grills, fryers, roasters, and other kitchen equipment to guarantee food safety and quality. In addition, the role demands attention to the freshness of food and ingredients by checking quality, managing stock rotation, and adhering to standard portion sizes, cooking methods, and quality standards. The employee will also be responsible for stocking and maintaining food products at line stations to enable seamless service during peak hours. Kitchen responsibilities extend to handling, storing, and rotating all food supplies in accordance with restaurant policies, turning or stirring foods during cooking for even preparation, seasoning and cooking food according to recipes or personal judgment, and applying various cooking techniques including baking, roasting, broiling, and steaming. Their duties further include measuring and mixing ingredients, portioning, arranging, and garnishing dishes to meet set specifications, and ensuring proper plate presentation and garnish setup for all menu items. This role requires multitasking as the employee assists in food prep during off-peak periods and may substitute for other cooks during busy service times. Closing responsibilities include following a structured kitchen closing checklist and supporting colleagues to ensure kitchen readiness for the next day. The position demands active participation in team meetings with a proactive attitude toward offering suggestions for operational improvements. Coordination and teamwork are critical to meet guest needs and maintain high service standards, including filling in for fellow employees when necessary. In essence, this role is an integral part of the culinary team, dedicated to upholding food safety, quality, and guest satisfaction while fostering a positive, efficient work environment within a leading restaurant group.
