The Signature Fine Dining/Demi Chef position is an hourly opportunity designed for culinary professionals ready to engage in a fast-paced, creative environment. Working in these esteemed restaurants allows chefs to develop their culinary skills, learn advanced cooking techniques, and grow as craftsmen in the hospitality industry. The role involves not only food preparation but also engaging with guests and team members to ensure every dish meets the highest standards of quality and presentation. As a Signature Fine Dining/Demi Chef, you will be responsible for operating a variety of kitchen equipment such as ovens, grills, broilers, and steam kettles, ensuring proper temperature control and adherence to food safety regulations like HACCP. Your duties include preparing sauces using advanced techniques, managing inventory, and coordinating with the culinary team to follow menus and banquet event orders (BEOs). The role requires a solid understanding of culinary techniques like braising, roasting, sautéing, and confit preparation, as well as the ability to bone, trim, and clean seafood and meats. Communication skills are vital as you will discuss menu preparations with fellow cooks and interact with guests to contribute to an exceptional dining experience. Competency in food safety certifications, knowledge of culinary terms, and proficiency in related technology systems such as plate costing buffet, CAFÉ system, and kitchen display systems (KDS) are essential. Candidates must be able to work various shifts, including early mornings, late nights, weekends, holidays, and special events, in a dynamic and collaborative team environment. This role offers a competitive pay rate of $30.50 per hour in California and select benefits as part of the overall compensation package.
