Within this dynamic organization, there are currently two available positions for Lead Cooks. These roles are essential in ensuring the efficient preparation and service of meals within MDOC facilities. The Lead Cook positions are responsible for overseeing lower-level cooks and kitchen staff by guiding food preparation processes and meal service delivery following MDOC-approved procedures, recipes, menus, and reporting systems. The positions require a strong sense of leadership and the ability to maintain high standards of food safety, sanitation, and quality. Lead Cooks manage multiple operational facets, including food production, sanitation of kitchen premises, compliance with Hazard Analysis and Critical Control Point (HACCP) standards, meal service coordination, and proper food storage.
A Lead Cook’s daily activities include preparing and serving meals to recruit staff, guests, and program participants. These roles demand a hands-on approach during meal service, combined with supervisory responsibilities to motivate and direct subordinate kitchen staff. The role involves cleaning all kitchen and dining areas during and after meal service to maintain a sanitary environment that meets public health and departmental standards. Candidates for these positions must be familiar with applicable public health and sanitation regulations and capable of enforcing these guidelines among the team, ensuring consistent departmental compliance.
These positions require prior culinary experience, particularly in quantity cooking and food preparation. Applicants should have at least two years of relevant experience, including one year equivalent to a Cook E6 level. The role demands excellent organizational skills, attention to detail, and the ability to work efficiently within a team in a fast-paced environment.
